(upbeat music) When you think of barbecue, Los Angeles is probably the last city that comes to mind, but the city of angels is in the midst of a smoky renaissance. Hi, I'm Danny Chow, a James Beard Award-nominated writer here at the Ringer, and this is Shift Meal, where we're catching chefs and restaurant people off the clock to share stories and dishes that define this city's food landscape. This time around, we're here to answer a not-so-simple question. What is LA barbecue anyway? In a city of transplants, barbecue has a way of building bridges between cultures, from Cambodia to the Texas Panhandle, from South Carolina to Colorado, from Mexico to South Korea. And yet, somehow, it's all distinctly LA, but how? I venture to four of the best spots in town to find my answer, so let's clock out and chow down. Welcome to Shift Meal.
