welcome back to adventures of the black belt sommelier I'm excited to tell you this morning about one of my by white wine from one of my favorite wineries in the world I have great affection for the wines from Domain Tonya I served them the red white on rosé by the glass at my restaurant F Scott's in Nashville back in the late 80s early 90s when it was possible to search the network they were affordable at that time where you could serve them by the glass they're a little too expensive now but because the prices have risen but I have great affection for their wines I've you know enjoyed them for years and years and years but it's also kind of the the importance of Domain Tonya in the American culinary history is almost important possible to overstate on Kermit Lynch discovered that or introduced to my Tonya to the United States along with the domain to view telegraph and shadow enough to pop and that you know in Alice Waters served the Tonya wines at shape and Nice and Richard only wrote a book about Domain Tonya and all of this kind of combined to to begin to kind of be the beginnings of the farm to table movement Alice Waters and Jean Lee Paladama really the first American chefs to talk about purchasing things from farmers rather than you know food distributors like Robert or Cisco and it kind of changed everything they were also the first Alice Waters at shape and east was also you know a great champion of artisanal family produced French wines that went with her cuisine so well so too many Tonya is very important in American culinary history and wine history and the wines are extraordinary and maybe more importantly the wines are extraordinary Lou Farro died about I guess three years ago at 102 she attributed her long and happy life to the fact that she had at least a glass of wine from her vineyards every day and she swung a hundred times in a swing in her backyard she attributed her long life to those two factors which I had swing swing in a hundred times because I sure could have a glass of Tonya wine every day and then I but I don't know that I really want to live another 30 years but so you know and coincidentally my friend Steve Hoffman who's a champion award food and wine writer actually wrote Lou Farro's obituary for Food and Wine magazine when she passed away to Steve who lives in the Twin Cities and plan to mention this but you might keep him in your prayers his house burned down last week his very very special house on a lake near here burned down last week heartbreaking what's really heartbreaking gosh that's off topic but if you think about it you might keep him in your prayers I did open a bottle of the 2021 Domain Tonya Bondo blog last night it is extraordinary it's a blend of 60% clear at 30% uni blanc and then a little bit of Thorbalank Marson and roll a great cold roll that you don't hear too much about but all of those combined to make kind of something that's kind of greater than the sum of its ports as they say it's very full-bodied it's really all about right pairs and this kind of honey texture lavender honey texture rich rich rich on the palate you know just like an seemingly endless finish I think I can take I think I can taste it right now and I opened it last night at six o'clock or so it's not inexpensive you can find it it's not ubiquitous but you can't find it it's usually around $60 bottle but you can spend a whole lot more money and not not purchase of wine that's nearly as special as this is and isn't important as this is and which delivers as much pleasure as this does so I would suggest urge you to look for if you see it on a wine list order if you see it in a wine store by it 2021 to me Tompier bundle block it's a very very special wine from this very beautiful place behind me and I think you can just serve it with just about anything but the traditional thing the classic thing would be blue bass you could drink it well any of Tompier's lines are great with blue bass but if you want to get really really fancy you could make blue bass and serve the Tompier block with it or you know any kind of seafood seafoods too like that this actually the the soup the croissant that we served at F Scott's years ago that Josh we could made would be really really perfect but it'd be great with a rose chicken great with any kind of fresh fish with a little bit of cream or something it's it's just a wonderful wonderful wine worth worth searching for 2021 to me Tompier bundle walk thanks for tuning into adventures of a black belt so may if you find a bottle of this I promise you will be very glad that you bought it
