Stacey’s son, Benny, was diagnosed with Type 1 Diabetes just before he turned two in 2006. Since then, Stacey has been an incredible resource for anyone impacted by Type 1 Diabetes, and offers a huge amount of invaluable advice throughout this episode.

She is the author of ‘The World’s Worst Diabetes Mom’ (https://staceysimms.com/#!/book) and the award winning cookbook, ‘I Can’t Cook, But I Know Someone Who Can’. She was also named to the Charlotte Business Journal’s Forty under 40 and as one of the 50 Most Influential Women in Mecklenburg County by Mecklenburg Times.
