A to ani nemluvíme o otevřené lahvi „nějakého červeného“, ze které jste vařili před několika týdny. Vypít, nebo vylít?
Než se pustíme do toho, jak dlouho konkrétní vína zůstanou lahodná nebo aspoň pitelná, je důležité pochopit, že víno má svůj životní cyklus. Když je víno v lahvi, prochází po otevření procesem mikrooxygenace, kde malé množství kyslíku proniká uzávěrem a začíná pomalu zrát a rozkládat organické molekuly vína. „Jakmile se víno otevře a dostane se do kontaktu se vzduchem, začíná proces jeho okysličování a rychlého stárnutí. Uvolňují se aromatické látky. Oxidace vína je stejná chemická reakce jako například zhnědnutí rozkrojeného jablka,“ přirovnává proces sommelierka Denisa Kolaříková. Kyslík sice snižuje tříslovitost, ale mění aroma a klesá množství chuťových tónů typických pro jednotlivé odrůdy.
